Instructions
1: Clean the chicken and season it. 2: In a large pot, heat some oil and add the chicken to brown. 3: Add the chopped onion, scallions, garlic cloves, and bell peppers to the pot. 4: Stir in the garlic paste, ginger paste, and spices including seasoned salt, black pepper, Jamaican chicken seasoning, smoked paprika, browning, and fish & meat sauce. 5: Add the long-grain rice, kidney beans, coconut milk, pimento seeds, and scotch bonnet pepper. 6: Pour in the water and stir well. 7: Bring to a boil, then reduce the heat, cover, and let simmer until the rice is cooked and chicken is tender. 8: Finish with a few thyme sprigs and butter before serving.View original recipe
