cup tomato paste

oz canned diced tomatoes

cup vegetable broth
Instructions
Step 1: Soak lentils for 30 minutes. Step 2: In a pot, heat olive oil and sauté onion, carrot, and green bell pepper until softened. Step 3: Add minced garlic, mushrooms, and cook until mushrooms are softened. Step 4: Stir in salt, black pepper, Italian seasoning, fennel seeds, and red pepper flakes. Step 5: Add tomato paste, crushed or diced tomatoes, and tomato sauce, stirring to combine. Step 6: Pour in vegetable broth and bring to a simmer.
