What you need

tbsp coconut oil

yellow onion

garlic clove

scallion

thyme sprigs

scotch bonnet pepper

tsp crushed red pepper

can coconut milk

cup vegetable broth

tbsp seasoned salt

tbsp butter
Instructions
Step 1: Rinse the Jasmine rice under cold water until the water runs clear. Step 2: In a large pot, heat coconut oil over medium heat. Step 3: Add the chopped yellow onion and minced garlic, and sauté until translucent. Step 4: Add the cut-up squash, scallion stalks, thyme sprigs, scotch bonnet pepper, and crushed pimento. Step 5: Pour in the coconut milk and water or vegetable broth, and bring to a boil. Step 6: Stir in the rinsed rice and all-purpose seasoning. Step 7: Cover the pot, reduce heat to low, and cook for about 20 minutes until rice is tender.
