Instructions
Step 1: Cut the chicken thighs into 1-inch pieces and set aside. Step 2: In a bowl, mix 1/4 cup water, kosher salt, baking soda, and chicken. Allow to marinate for about 15 minutes. Step 3: In a separate bowl, whisk together the eggs and cornstarch. Step 4: Heat oil in a large pan over medium-high heat. Step 5: Dip chicken pieces into the egg mixture and add them to the hot oil. Cook until crispy and golden brown, about 5-7 minutes. Step 6: In another bowl, combine the ingredients for the General Tso's sauce. Step 7: Pour the sauce over the cooked chicken and stir to coat.
