cup unsweetened coconut flakes
cup fine cornmeal

cup all purpose flour

cup brown sugar

tsp cinnamon

tsp nutmeg

tsp ground ginger

tsp salt

tbsp vanilla extract

tbsp rose water

cup coconut milk
Instructions
Step 1: Grate the Caribbean sweet potato and cassava (or green bananas). Step 2: In a large bowl, combine grated sweet potato, cassava, coconut flakes, cornmeal, all-purpose flour, brown sugar, cinnamon, nutmeg, ground ginger, and salt. Step 3: Add vanilla extract, rose water, and coconut milk to the mixture and mix well. Step 4: Wrap scoops of the mixture in blanched or pre-steamed banana leaves and tie with kitchen twine.
