Instructions
1: Clean and cut the chicken into manageable pieces. 2: In a bowl, mix the chicken with Caribbean green seasoning, Jamaican chicken seasoning, all-purpose seasoning, salt, black pepper, and curry powder. Let it marinate for at least 30 minutes. 3: Heat cooking oil in a pot and sauté the chopped onion and garlic. 4: Add the seasoned chicken to the pot and cook until browned. 5: Add the chopped scallion, thyme, ground allspice or pimento seeds, ginger, scotch bonnet pepper, diced potato, and carrot. 6: Pour in enough hot water to cover the chicken and vegetables. 7: Bring to a boil, then reduce heat and simmer until chicken is cooked through and flavors meld, about 30 minutes.View original recipe
