Instructions
Step 1: Bring a large pan to medium heat and add olive oil. Step 2: Sauté the diced yellow onion until translucent. Step 3: Add minced garlic and sauté until fragrant. Step 4: Add the seasoned salmon to the pan. Step 5: When the salmon is almost cooked, add butter and cream cheese. Step 6: Stir until the cream cheese is creamy. Step 7: Add heavy cream and bring to a low simmer. Step 8: Turn the heat to low and add shredded mozzarella and parmesan, stirring until melted. Step 9: Add halved grape tomatoes and spinach; stir until the spinach wilts. Step 10: Mix in the boiled rotini pasta.
