Instructions
Step 1: Season the beef with the seasonings, pastes, and sauces. Step 2: In a large heavy-bottom pot, sear the beef on all sides on medium-high heat. Step 3: Remove the beef and deglaze the pot with some stock, scraping up the brown bits. Step 4: Add the chopped onion, garlic, scallion, pimento, and scotch bonnet pepper, and sauté for a few minutes. Step 5: Add the beef back in, then pour in enough stock to nearly cover it. Step 6: Add in the thyme and rosemary. Step 7: Cover the roast and place it in a 325-degree oven for 3 hours total. Step 8: Two hours in, add the chopped potatoes and carrots.
