Instructions
Step 1: Preheat your oven to 350°F. Step 2: Season the lamb shoulder chops with Caribbean green seasoning, mild wet jerk seasoning, Jamaican seasoning, salt, black pepper, and smoked paprika. Step 3: Heat the high-heat cooking oil in a large oven-safe pot over medium-high heat. Step 4: Sear the lamb chops on both sides until browned. Step 5: Remove the lamb and set aside. Step 6: In the same pot, add the chopped bell peppers, onion, garlic cloves, pimento seeds, thyme, and rosemary. Sauté for a few minutes until softened. Step 7: Add the scotch bonnet and red wine (if using). Allow to simmer for 2 minutes. Step 8: Return the lamb to the pot and add the beef broth. Step 9: Cover the pot and transfer it to the oven.
