Instructions
Step 1: Preheat the air fryer to 400 degrees. Step 2: Season chicken thighs with avocado oil, chicken seasoning, old bay, garlic paste, fresh rosemary, sage, thyme, and honey. Step 3: Place chicken thighs skin-side down in the air fryer and cook for 20-25 minutes, flipping halfway through. Step 4: While the chicken is cooking, prepare the mashed potatoes by boiling Yukon gold and russet potatoes until tender. Step 5: Mash the potatoes and mix in garlic & herb butter, heavy cream, garlic paste, fresh rosemary, sage, thyme, salt, and pepper. Step 6: For the veggies, sauté sliced red cabbage, julienned carrots, and chopped spinach with garlic powder, onion powder, salt, and pepper until tender.
