Instructions
1: Pour frozen vegetables in a large bowl. Microwave uncovered on high until warm, about 8-10 minutes, tossing the vegetables half-way through. When warm, cut into smaller pieces, if desired. 2: Preheat oven to 375 degrees. In a saucepan on medium-low heat, add 1 tbsp butter and sauté the diced onion for about a minute. Add the contents of one Campbell’s® Condensed Cheddar Cheese Soup can and vegetable broth. Stir until well-combined, smooth, and warmed through. 3: Pour the cheese sauce over the vegetables. Mix to combine and ensure the vegetables are evenly coated. 4: Transfer half of the coated vegetables to an 8-inch by 8-inch baking dish. Sprinkle the 4 oz of shredded cheddar cheese, then add the remainder of the vegetables. Crumble the crackers over the casserole in an even layer, then pour the melted butter evenly on top. 5: Bake for 25-30 minutes or until the topping is golden brown.
