Instructions
Step 1: For Jerk Mayo Lobster Rolls, mix 3/4 lb cooked lobster meat with 2 tbsp mayo, 1 tbsp jerk marinade, 2 tsp fresh squeezed lemon juice, 1 celery rib finely chopped, 1 scallion chopped, 1/2 tsp Old Bay, and 2 tsp fresh parsley in a bowl. Step 2: Spoon the mixture into 2 lightly toasted brioche hot dog buns with butter. Step 3: For Curry Butter Lobster Rolls, combine 3/4 lb cooked lobster meat, 3 tbsp butter, leaves from 2 thyme sprigs, 1 tsp garlic paste, 1 tsp ginger paste, and 1 tbsp curry marinade in a skillet and heat thoroughly.
