8-Minute Weeknight Pasta with Salmon

A quick and simple weeknight pasta with air-fried salmon, designed to be prepared in under 10 minutes thanks to an airfryer and multi-tasking.

1. PASTA: In a pot, boil the pasta in salted water until al dente (about 8 minutes). While the pasta is cooking, prepare the sauce. In a pan, sauté the onion, garlic, scallion, and thyme for about 2 minutes in the butter and olive oil on medium- to medium-low heat. Add the heavy cream and bring to a simmer for about 4 minutes. While the sauce is simmering, stir in the all-purpose and Italian seasonings. (Optional: Add some parsley and red pepper flakes for heat, saving some for garnish.) After 4 minutes, once the sauce has thickened a bit, stir in the shredded parmesan and mozzarella cheeses until melted and well incorporated. Turn off the heat and taste for salt and pepper. Lastly, stir in the cooked and strained pasta. 2. SALMON: While the pasta and sauce are cooking, season the 2 salmon fillets with 2 tsp seafood seasoning, 1 tsp Italian seasoning, a pinch of salt & pepper (if desired - may not need it), and 1 tbsp of wet jerk seasoning. Spray the inside of your air fryer with cooking spray, then cook the salmon at 400 degrees F for 8 minutes (or a minute or two longer depending on your preferred level of doneness). 3. Serve the cooked pasta with the air-fried salmon fillets.
