Pasta Bolognese is a classic Italian dish featuring a rich, savory meat sauce made with Schweid and Son’s Signature Blend, vegetables, crushed tomatoes, and herbs, served over pasta.

1. Add olive oil to a dutch oven over medium heat. When the oil comes to temp and begins to glimmer, add the chopped onion, carrot, and celery. Sauté and let the vegetables sweat, stirring occasionally, for about five minutes or until they become translucent and fragrant. 2. Create a well in the middle of the vegetables. Add the tomato paste. Leave untouched to toast for 30 seconds, then mix it into the vegetables. 3. Create a well in the middle again, then add Schweid and Son’s Signature Blend made with premium chuck and brisket. Break up the ground beef very well as it browns, and incorporate it into the vegetables. Brown for about 5 minutes. 4. Season with salt, pepper, and red pepper flakes (if using). 5. Stir in the crushed tomatoes. Reduce the heat to medium-low, cover and allow to simmer for 20 minutes. 6. Add heavy cream, chopped basil and parsley, reserved pasta water, cover and continue to simmer for another 20 minutes.
