Step 1: Sauté spinach in a clean skillet on medium heat (no oil needed) until wilted. Roughly chop the cooked spinach and set aside. Step 2: Peel and clean the shrimp. Cut the shrimp into 2-3 pieces each. Season with salt, pepper, and old bay. Heat olive oil in a skillet on medium heat, and cook the shrimp pieces for about 3-4 minutes. Step 3: Add the shrimp to a bowl with room temp cream cheese, the cooked spinach, and the parmesan. Season with old bay, garlic powder, and onion powder (taste for salt and pepper). Set aside. Step 4: Clean and pat dry the salmon. Make deep slits into the sides of the salmon pieces. Be careful not to cut all the way through. Season the salmon with salt, pepper, onion powder, garlic powder, and old bay. Generously stuff the salmon with the shrimp, spinach, and cheese stuffing. Step 5: Melt the butter in a clean skillet on medium (to perhaps just above medium) heat. When hot, add the stuffed salmon pieces skin side down. Cook for 5 minutes then flip. Cook for another 5 minutes.
