Step 2: Sear the lamb in high-heat oil on medium-high for 3 minutes per side or until desired doneness, basting with butter and aromatics. Step 3: Peel and cut the Yukon gold potatoes, then boil in salted water until cooked. Step 4: Simmer butter, half & half, and aromatics in a saucepan until potatoes are done.
