RECIPE: 2.5 cups all-purpose flour 1 tsp baking powder 3/4 tsp salt (or to taste) 3/4 tsp black pepper 1 cup shredded saltfish (boiled twice prior) 1/2 onion, chopped 1 stalk scallion, chopped 2 garlic cloves, minced Chopped sweet peppers (three different colors, 1/3 of each) 1/3 chopped scotch bonnet (no seeds) 2 cups of water (more or less - pour a little at a time and work it in until the batter reaches desired consistency) Vegetable oil for frying
