1: In a bowl, mix the flour, salt, baking powder, curry powder, bijol seasoning, and sugar. 2: Cut in the cold unsalted butter and vegetable shortening until the mixture resembles coarse crumbs. 3: Gradually add the ice water until the dough comes together. Wrap in plastic and refrigerate for at least 30 minutes. 4: For the filling, cook the ground beef until browned, then add onion, garlic, scallions, bell pepper, and scotch bonnet pepper. Cook until softened. 5: Stir in thyme, crushed pimento seeds, ginger paste, salt, black pepper, ketchup, soy sauce, browning, and breadcrumbs. Mix well. 6: Roll out the dough and cut into circles. Place filling on one half, fold over, and crimp edges to seal. 7: Preheat the oven to 375°F. Brush the tops with the reserved beaten egg. 8: Bake for 25-30 minutes until golden brown.
