Step 1: Drain extra virgin olive oil from one can of Wild Planet Wild Mackerel into a medium-sized frying pan over medium heat. Step 2: Sauté the prepared onion, garlic, scallion, thyme, scotch bonnet, and bell peppers in the EVOO for roughly two minutes. Step 3: Add the mackerel from both tins into the pan. Leave fillets whole or break them up if you’d like. Step 4: Season with salt and pepper. Step 5: Lower the heat to low. Add the tomato sauce, and incorporate everything well. Step 6: Allow to simmer on low heat for 3-5 minutes.
