Step 1: Add the sardines to a bowl. Do not drain. Removing the spines is optional, but not necessary. Step 2: Add the prepared onion, garlic, scallion, thyme, scotch bonnet pepper, and tomato to the sardines. Mix everything in well while breaking up the sardines. Step 3: Season with seafood seasoning, black pepper, and a squeeze of fresh lime. (Salt to taste is optional.) Give everything a final mix, and serve with crackers.
