Step 1: Rinse the Jasmine rice under cold water until the water runs clear. Step 2: In a large pot, heat coconut oil over medium heat. Step 3: Add the chopped yellow onion and minced garlic, and sauté until translucent. Step 4: Add the cut-up squash, scallion stalks, thyme sprigs, scotch bonnet pepper, and crushed pimento. Step 5: Pour in the coconut milk and water or vegetable broth, and bring to a boil. Step 6: Stir in the rinsed rice and all-purpose seasoning. Step 7: Cover the pot, reduce heat to low, and cook for about 20 minutes until rice is tender. Step 8: Remove the scotch bonnet pepper before serving, and stir in butter for added richness.
