Step 1: Preheat your oven to 400°F (200°C). Step 2: Season the lamb rib chops with avocado oil, salt, pepper, and jerk seasoning (if using). Step 3: Sear the lamb chops in a hot pan for 3-4 minutes on each side until browned. Step 4: Add garlic, rosemary, and thyme to the pan, then place it in the oven for about 10-15 minutes for desired doneness. Step 5: For the mashed potatoes, boil peeled and chopped potatoes until tender. Step 6: Drain and mash the potatoes with butter, half & half, garlic, rosemary, thyme, salt, pepper, garlic powder, and onion powder.
