Step 1: Season the chicken thighs with jerk marinade and all-purpose seasoning. Step 2: Heat olive oil in a skillet and brown the chicken thighs on both sides. Step 3: Remove the chicken and set aside. In the same skillet, add butter, onion, and garlic, sauté until fragrant. Step 4: Add broccoli and cook for a few minutes until tender. Step 5: Stir in orzo, chicken stock or water, and optionally add Red Stripe beer or white wine. Step 6: Return the chicken to the skillet, cover, and cook until the orzo is tender and the chicken is cooked through. Step 7: Stir in heavy cream and cheese until melted and creamy. Step 8: Garnish with reserved scallions and serve.
