Step 1: For Jerk Mayo Lobster Rolls, mix 3/4 lb cooked lobster meat with 2 tbsp mayo, 1 tbsp jerk marinade, 2 tsp fresh squeezed lemon juice, 1 celery rib finely chopped, 1 scallion chopped, 1/2 tsp Old Bay, and 2 tsp fresh parsley in a bowl. Step 2: Spoon the mixture into 2 lightly toasted brioche hot dog buns with butter.
