Step 1: Season the ribeye steaks with salt, black pepper, green seasoning, and wet jerk seasoning. Massage the seasoning into both sides of each steak. Step 2: Heat olive oil in a grill pan or cast iron skillet over medium to medium-high heat. Step 3: Cook the first side of the steaks for 3 minutes, then flip them. Step 4: Add butter, crushed garlic cloves, thyme, rosemary, and chopped scallion to the pan. Step 5: Baste the steak and cook for another 3 minutes for medium doneness. Step 6: For the herb mashed potatoes, cut, peel, and boil the potatoes. Step 7: In a separate pot, prepare the milk mixture with melted butter, heavy cream and milk, rosemary, sage, and crushed garlic cloves. Simmer on medium-low for 10-15 minutes. Step 8: Strain the milk mixture and mix it into the crushed potatoes. Mash with salt, pepper, and optional garlic and onion powder, along with sour cream to taste.
